Chant d’Eole – Belgium

The Chant d’Éole estate was created in 2010 following an association between a family of renowned Champagne winegrowers and a large family of Belgian farmers, the Ewbank family.
More than 470,000 vines of traditional grape varieties – Chardonnay (97%), Pinot noir (2%) and Pinot blanc (1%) – were planted on an area of 52 ha located in Quévy (south of Mons) in Wallonia. Facing south and mainly limestone, the land has ideal drainage and irrigation qualities for the production of traditional method sparkling wines. It is this soil which gives minerality and fine bubbles to the different vintages.
Domaine du Chant d’Eole entered the quality sparkling wine market in October 2015 using the traditional method.
Le Chant d’Eole currently has a production capacity of 150,000 bottles per year.

3 cuvées are currently offered: Brut blanc de Blancs, Rosé Brut, Cuvée Reserve/Prestige

The Brut Blanc de Blancs asserts the finesse, freshness, elegance and roundness of Chardonnay, the Domaine’s signature grape variety, after at least 18 months of aging on slats. The low dosage (8 g/L) of this wine and its aging after disgorging (3 months) give it a very good balance. You can enjoy this Blanc de Blancs now, or choose to let it age for up to 5 years in the cellar. To highlight its unique style, its bouquet, its aromas, it is recommended to serve this wine at around 8°C

Rosé Brut is a blend of Chardonnay and Pinot Noir vinified in red after at least 18 months of aging in the cellar. The Chardonnay brings finesse and liveliness while the Pinot Noir brings its fruity aromas, its beautiful pale pink-orange color in a harmonious complexity. The moderate dosage of this wine (9 g/L), its low sulfur content and the return to the cellar for additional aging time after disgorging give it a maturity where Chardonnay and Pinot Noir can develop all their authenticity. Delicate and refined !
You can enjoy it now or choose to let it age for up to 5 years in the cellar. To showcase it in optimal conditions, it is recommended to serve this wine at around 8°C.

The Cuvée Prestige/Réserve is made from Chardonnay only via an exclusive blend of the best juices. After at least 48 months of aging in the cellar, the Prestige vintage takes on a gold color with an inimitable straw reflection. Its train of bubbles is fine and delicate. Its second fermentation in the bottle gives it more roundness and more character. Its vinosity and a surprisingly fresh finish are particularly appreciated by the most enlightened enthusiasts. Dosage 8g/L. Drink straight out of the bottle or within 5 years.

A new vintage aged in Walloon oak barrels will be released shortly to compete with the most prestigious vintages of Champagne. To be continued…

In the meantime, the domain has been drowning in awards since the beginning of its activity!

During the Concours Mondial de Bruxelles, organized in 2019 in Switzerland and internationally renowned, Chant d’Eole was rewarded with: 2 gold medals, the largest gold medal, and as a bonus the international revelation for the Cuvée Prestige 2014 Brut Blanc de Blancs.
